Move over, Green Bean Casserole

It's time for another dish to take the place of that time honored favorite, Green Bean Casserole.

I collect old cookbooks, and recently I came across a dish that somehow has been ignored by cooks for decades. It's called Tasty Beef and Cornbread.

Like the old fave, Green Bean Casserole, this little known flavor sensation was created by a food company to help sell its product. While the G.B.C. (as it's casually known) was created by the Campbell Soup Company in 1955 to sell cream of mushroom soup, Tasty Beef and Cornbread was created by the Carnation Company to sell evaporated milk. The recipe I found was in a booklet published in 1954. (There was an ad for the Burns & Allen TV show on the back!)

So how do you make it? Well you start by browning one pound ground beef in butter.

Then you take the ground beef out, add in onion, garlic and green pepper, and cook until onion is clear. Then add some flour and 1 large can undiluted can of Carnation Evaporated milk mixed with water. Then put the meat back in, and mix it up. Put the meat mixture  in a 9 inch square pan. Top with prepared corn bread mix in a strip around the edge of the pan, and then put peas in the middle. Bake at 400 degrees for 25 minutes.

Sound good?

At least one person in my office says he would eat it. I say that's the beginning of a new food craze!

On the off chance that this recipe does not sound appealing to you, maybe this will be better.

The booklet, which I bought for 50 cents, also features a recipe for Summer Salad. It includes lemon jello, Carnation Evaporated Milk (of course) and cooked ham, green onions, green pepper, green olives, pimiento and steak sauce.
