2 cups crushed seasoned stuffing
1 cup finely chopped onion
4 eggs, lightly beaten
1/4 cup grated Parmesan cheese
1/4 cup butter, melted
3 tbsp chicken broth
3 garlic cloves, minced
1-1/2 tsp dried thyme
1/4 tsp each salt and pepper
2 packages (10 oz each) frozen chopped spinach, thawed and squeezed dry
In a large bowl, combine everything but the spinach. Then stir in the spinach until blended. Roll into 1-inch balls. Place on a cooking-spray coated baking sheet and bake at 350 for 15-20 minutes or until golden brown.
